Ingredients
I medium green papaya, peeled and cut into large cubes
2 tablespoons vegetable oil
1 thumb size knob of ginger
3 cloves of garlic, chopped
1 cup red onion, chopped
6 pieces of chicken with skin
5-6 cups water
2 tablespoons fish sauce
1 chicken bouillon cube
Method
- In a large pan, heat the oil.
- Cook on medium heat and when hot, add the ginger and chopped garlic. Cook for one minute.
- Add the chopped red onion, stirring until it's translucent.
- Add the chicken and stir for 5 minutes. Add the water.
- When the mixture starts to boil, add the fish sauce and chicken bouillon cube.
- Lower the heat, cover the pot and simmer for 20 minutes.
- Add the green papaya to the pot and simmer for 3 more minutes.
- Simmer for 2 minutes before turning off the flame. Do not remove the lid of the pot since the steam will help continue cooking the vegetables.
